Ho ho ho!! Merry Christmas!!

Sorry for the lack of posts lately, it has not been a good health week and I’ve basically been going to work and sleeping, BUT there has been a lot of advances with the doctors so more posts will be coming again!!

In the Christmas spirit Justin and I hosted a Christmas party last night for out close friends and I did some Christmas baking!

This recipe is so fast and easy!! No bake cookies are always a favourite of mine to make because it’s almost impossible to mess them up.

|| No Bake Peppermint Patties ||
1/4 C light corn syrup
1/3 C butter – softened
4 C powdered sugar divided
1-2 tsp peppermint extract
Food colouring
Sugar – to roll cookies in

Combine your corn syrup and butter in a bowl.
Add 2 cups of powdered sugar and combine.
Add your extract. Slowly add until desired flavour.
Sprinkle another cup of powdered sugar on a cutting board and turn bowl onto it.
Combine the sugar with the dough.
Add the last cup of sugar.

This is the point that you add the good colouring. I divided my dough up into 3 sections so I could have 3 colors.

Roll the dough into small balls and roll in the regular sugar. Place on a cookie sheet lined with parchment paper and flatten with a fork. Let sit for a day.

Enjoy!!

The other cookies I made were snowman Oreos. All I did was did an Oreo in melted white chocolate, let it dry and then drew the faces with food colouring! So cute!!!
